Orange Herbed Chicken Stew

| 3 ounces | chicken tenderloin, diced |
| 1/3 cup | orange juice |
| 1/3 cup | Mandarin oranges |
| 4 cups | mushrooms, sliced |
| 1 teaspoon | olive oil, divided |
| 1 tablespoon | cider vinegar |
| 1 tablespoon | parsley, chopped |
| 1/2 teaspoon | garlic, chopped |
| 1/2 teaspoon | pure orange extract |
| Salt and pepper, to taste | |
Instructions:
In a medium nonstick sauté pan, heat 2/3 teaspoon oil. Add chicken, vinegar, parsley, garlic, and salt and pepper. In a second nonstick sauté pan heat remaining oil and sauté mushrooms until they soften. Add orange juice, oranges, and orange extract to the first pan and simmer for 3 minutes. Place mushrooms in a serving bowl and top with chicken mixture.
