Beer Cheese Soup

| 1/2 cup | butter |
| 1/2 cup | flour |
| 2 1/2 pts. | chicken stock or water and stock base |
| 1 tbsp. | MSG |
| salt to taste | |
| 1/2 cup | carrots, diced or shredded |
| 1/2 cup | onions, minced |
| 1/2 tsp. | mustard, dry |
| 6 oz. | cheddar cheese, medium or sharp grated. |
| 1 11 oz. | bottle of beer |
| Saute onions until clear but not brown. Blend in flour, mustard, and chicken stock or water. Cook gently for a few minutes. Add cheese and beer, simmer until the cheese has melted. | |
