Pecan Butter Spread

| 1 1/4 c. | chopped pecans |
| 2 Tb. | peanut oil |
| 8 oz. | Brie cheese, rind removed |
| 1 (3 oz.) pkg. | cream cheese, softened |
| 2 Tb. | sherry |
| 1/4 tsp. | salt |
| Garnish: | Roasted Pecans |
| 1 c. | pecan halves |
| 1 Tb. | butter, melted |

| Serve with: | crackers, apple slices |
Process pecans and peanut oil in a food processor until smooth. Add Brie, cream cheese, sherrry, and salt; process until mixture is completely blended. Store in an airtight container in refrigerator. Serve at room temperature with crackers or apple slices topped with Roasted Pecans.
